Origin: England. A dwarf (or hedgerow) variety bred for aroma in 1995 at Wye College. Created through an open pollination, Sovereign’s lineage includes Pioneer and Whitbread Goldings.
Usage: Aroma. Sovereign can be called on for light bittering but shows to best effect as a late or dry hop. With a classic English profile that trends toward fruitiness, it blends nicely but can easily stand alone as a showcase in hoppy English ales and non-traditional lagers and hybrids.
Aroma & Flavor Characteristics: Complex with moderate to intense fruit (peach, red currant, berry, cherry) not quite balanced by a delicate, tangy spice quality. Suggestions of green tea leaves. Pairs well with earthy or herbal varieties in a blend.
